Beautiful dark red color. Complex and very intense perfumes . Round, rich and long, concentrated with powerful but ripe tannins, very silky in the finish. Expressive, well balanced despite its power. On the palate we find the aromas of fruit alcohol but also liquorice.
At its best with meats in sauce, all the great Mediterranean cuisine with olives and herbs, marinated game as well as cheese (goat or sheep).

Mediterranean. The sun (most sunshine of France) and the wind naturally concentrate the grapes.

Slopes with poor soils located in the heights of the eastern Pyrenees. The selection of old vines (more than 50 years old) in the region of Maury, on stony plateaus for Grenache and Syrah. Mourvèdre comes from the coastal region near Narbonne, very close to "la Clape" which gives it all its specificity. Yields are obviously very low.

60% Grenache - 20% Syrah - 20% Mourvèdre. Manual harvest. Long, temperature-controlled maceration. Ageing process starts in vats where malolactic fermentation takes place. The wine is transferred into oak barrels for 9 months. Manual racking. The wine is carefully blended before being bottled without filtration.
