75% Cabernet Sauvignon - 25% Merlot. The grapes are harvested in October at perfect ripeness. Temperature-controlled alcoholic fermentation in vats before a long maceration period of 2 to 3 weeks. Devatting and pressing (only the free-run juice and the first press juice are kept). The malolactic fermentation takes place in vats. Slow clarifying during winter. The wine is transfered into barrels where it is aged for several months.
