Feel free to drink this wine as an experience (Decant!) on its own or reserve it for special, rich dishes. Grilled and matured meat from Rubia Galega or Wagyu for example, a variation of strong cheeses, Lamb rack with winter vegetables or a fillet of deer or roebuck.

Temperate Mediterranean climate, with a strong maritime influence, due to the proximity of the Pacific Ocean and Maipo river. The mist in the early hours of the day assures low temperatures which dissipate later on, opening to higher temperatures, regulated by the coastal breezes in the afternoon.

Hand-picked grapes with a double selection on the sorting table. Cold prefermentative maceration of 6 days, in stainless steel tanks, followed by inoculation of the juice into stainless steel tanks with selected yeasts to ferment. After fermentation the wine and the skins of the grapes are left in the tanks for about 8 –10 days . Ageing takes place in french oak barrels, during 14 months.
