Botrytis Cinerea develops during the season. Only the over-ripened grapes affected by the noble rot will be harvested. In this way, musts of great sugar richness are obtained which, after fermentation at 20 ° C., produce great sweet white wines. Harvest is matured in barrels for 12 months.
